Chef Stijn Bauwens used to work for three Michelin star restaurant De Karmeliet in Bruges. He is now one of the ambassadors of the North Sea Chefs, a group of chefs who promote the use of sustainably caught fish and the inevitable by-catch. The twelve North Sea Chefs learn from each other through the exchange of their best recipes.

Stijn was recently crowned the ‘Best shrimp croquettes maker’. He loves to work with pure ingredients preferably regional. Besides the use of sustainable North Sea fish and seafood, all the cheese is from Belgium, some sourced from their neighbours ‘t Reigershof, an organic goats farm in Klemskerke. Attention is paid to all facets of presentation from the food to the menu.
