Chef Stefan Steinigeweg loves a contemporary, modern way of cooking and to surprise his guests with pure products that take the center stage. He prefers to source his ingredients for restaurant ‘Waters of the World’ from local suppliers that lie within a radius of 50 kilometers around Bad Nieuweschans in the Netherlands.

On the menu you will find where the food originates from, like the apples, pears, apple juice and Oldambster (black currant) juice from Landwinkel Meinardi in Noordbroek or the delicious cheeses from cheese maker Oldambt in Blijham. And there are many more regional products to enjoy like Blaarkopsausage (cow), pear juice, Abrahams mustard, elm honey and Groninger spelt beer.

Fontana Bad Nieuweschans is known in the Netherlands as a wellness resort. During your day of relaxation you can enjoy healthy fruit shakes and an assortment of dishes in the brasserie or saunalounge. In restaurant ‘Waters of the World’ you are pampered in a gastronomical way and are always welcome even if you haven’t made any use of Fontana’s great facilities.

In the restaurant they serve local sustainable fish. We had a great dish of scallops, red beet, black truffel risotto, celeriac and scorzonera, and that was just for starters!

For our main dish we had cod, wadden shrimps, sweet pepper antiboise, carrots, sauce mousseline and a white wine sauce.

They not only have a wine menu, where all the wines can be ordered per glass, but also have a unique watermenu. On it you will find the special ‘wholesome water’, that helps if you have a mineral deficiency. The dishes on the menu change with the seasons and can be supplemented if you have any special dietary needs like gluten free or no dairy products.
